A.MAZ.ING……is the only way I can describe the 2nd Annual Virginia Food Security Summit! I gained valuable information and great insight on major issues regarding our health, protecting our environment and building the sustainability of locally grown food.  The summit included farmers, producers, chefs, business owners, educators, bloggers, political leaders and corporate representatives. Not only was it an opportunity to network with major stakeholders but a breeding ground for change, movement and collective action to help support how we see food in Virginia. ……they are good for the heart. The more I eat them, the more…..I GET YOKED! Red Beans and Rice:  Did you know?? One cup of red beans provides around 16 g protein; 1 cup boiled rice provides around 5 g protein. Both vegetarian sources of protein are incomplete, meaning they lack one or more essential amino acid. Rice is deficient in the amino acid lysine, while beans are deficient in the amino acid methionine. When beans and rice are combined, they make a complete protein with all essential amino acids.   A worried man goes to his doctor and explains, “Doc, there’s something seriously wrong with my digestive system!” “If I eat carrots, when I go to the bathroom, out comes carrots! If I eat peas, I go, and out comes peas! I eat apples and  literally-I get apples! “My Plate” replaces Food Pyramid

  Whoa! After 15 or so years we finally realize the Food Pyramid is a bunch of crap! 6-11 servings of Carbs- REALLY! Yea, if you are an Olympic athlete.  We now have a new, fresh guide on how we should eat. Well, at least I think we do…..
